This is the easiest and most flavorful recipe for a no-fuss dinner. Throw your favorite sausage in the oven with peppers, onions, and spices. This will become an instant household favorite and is perfect for those on a budget! This sheet pan dinner is the best roasted potato dish you'll ever make!

Fast, Easy & Cheap!

EASY: Peel 4 large potatoes, chop an onion, slice a few bell peppers and your favorite sausage!

FAST: Less than 10 minutes of prep! The oven does all the work.

CHEAP: If you have a favorite premium sausage then use it. But this recipe works great with budget-friendly sausage! Even little smokies or other cocktail sausages come out great. Use all green bell peppers if you're on a budget.

How to Roast the Perfect Peppers and Potatoes

The first step to roasting perfect potatoes is coating them evenly with enough oil, salt and spices.

When roasting veggies with spices be sure to mix the spices around in the bowl with oil. If you sprinkle dried spices on top of the vegetables the spices could easily burn up and ruin the dish. So be sure to mix the spices in when coating the veggies with oil.

Use a generous amount of salt and oil! Think about your favorite french fry. It's deep-fried in oil and coated in salt from every angle. You want every square inch of your veggies shiny with oil & seasoned with salt!

For the best presentation (and this is 100% optional) mix your potatoes with a touch of paprika when tossing them in oil. It will add to the golden hue and instantly elevate your meal. Even though it doesn't impact the taste it will dazzle your eyes. I promise. It's kind of like grill marks on a steak 😉

Russet and white potatoes are my favorite to roast but feel free to use whatever you have on hand.

Cooking time matters!

I don't know what is wrong with the world but I've never ever once enjoyed roasted potatoes that were in the oven for less than 45 minutes. There are a million potato recipes out there saying to cook potatoes for 35 minutes. DO NOT BELIEVE THEM!

COOK POTATOES FOR AT LEAST 45 MINUTES. Maybe even more. I want you to have a nice golden crust on the outside.

Put your cubed potatoes in the oven first, bake for 20 minutes then add the remaining veggies and sausage for the final 25 minutes.

Don't put everything in the oven at once. I do this ALL the time because I'm lazy. I always burn the edges of my sausage and turn the bell pepper to ash. Don't be like me 🙂

Can I Add More Veggies?

You can toss in any other vegetables you like! The sky is the limit!

If you're wanting to roast carrots, beets, and winter squash like butternut or brussels sprouts then add those to the oven for the full cook time.

Faster cooking veggies like zucchini and squash can go in with the sausage at the end.

Ingredients
  

Bake First for 20 Minutes

  • 4 large potatoes (any kinds) peeled & chopped
  • 2 tablespoon oil (any kind)
  • salt & pepper OR spice blend to taste

Add to Baking Tray for 25 Minutes

  • 3 bell peppers sliced
  • 1 onion (any kind) chopped
  • 1 package sausage (any kind) sliced or chopped
  • 1 tablespoon oil (any kind)
  • salt & pepper OR spice blend to taste

Instructions
 

  • Mix potatoes, salt, spices, and oil in a bowl together. Make sure everything is well coated.

  • Bake at 400 degrees for 25 minutes.

  • Mix sausage, bell pepper, onion, salt, spices, and oil in a bowl together.

  • Add these ingredients onto the tray with the potatoes. Make sure everything is well coated. Use a separate tray if you think it will be too crowded. Bake everything at 400 degrees for another 20 minutes.
    Potatoes and veggies should be fork tender when done.
