Ingredients

  • 1 lb ground chicken
  • 4 oz turkey pepperoni, finely chopped (or pulsed)
  • 3 oz low-fat mozzarella, finely chopped (or pulsed)
  • 3 oz grated Parmesan (for coating)
  • Marinara for dipping (optional)

Step-by-step

Step 1 - Prep the mix

Finely chop (or quick-pulse in a food processor) the pepperoni and mozzarella.

Step 2 - Form nuggets

In a bowl, mix ground chicken + mozzarella + pepperoni until evenly combined. Form 20 small nuggets.

Step 3 - Coat & bake

Roll each nugget in grated Parmesan to coat. Arrange on a parchment-lined or well-sprayed sheet.
Bake at 400°F (205°C) for 14-18 minutes, until set and lightly browned.

Step 4 - Release & serve
