High-Protein Fluffy Banana Pudding

Ingredients

Fluffy banana base (5 servings)

  • 32 oz Oikos Triple Zero Vanilla Greek yogurt
  • 1 small box sugar-free banana instant pudding mix
  • Prime Bites Protein Brownies (cinnamon roll flavor works great) or another protein bar, chopped

Optional "cream topping" layer

  • 8 oz Greek yogurt
  • 10 g sugar-free vanilla or cheesecake instant pudding mix

Step-by-step

Step 1 - Make the base

In a large bowl, whisk yogurt with the banana pudding mix for 1-2 minutes.

Step 2 - Optional cream topping

In a second bowl, whisk 8 oz yogurt with 10 g vanilla or cheesecake pudding mix until thick.

Step 3 - Fold and layer

Chop the Prime Bites brownies into bite-size pieces.

  • Layered cups: Add a spoon of banana fluffy yogurt to cups, sprinkle brownie pieces, repeat layers, and finish with the cream topping if using.
  • One-bowl version: Fold brownie pieces into the banana fluffy yogurt and spread in a dish; top with the cream layer.

Step 4 - Chill or serve

Enjoy right away, or chill 30-60 minutes to set a little firmer.
